When you talk about a kind of donut frying fat will have something with a high smoke point, if peanut oil is so good. When the fat begins to smoke, ie, that trans-fatty acids, if you be sure the oil is scarce, can take the heat like. Never cook with canola oil, so I'm not sure, you can try if that's all you want and not go to the store, but may taste slightly different.

Take a look at the smoke if you smoke, you are too hot.

Canola is fine I use for almost any dessert recipes I with (cookies, donuts cooking, muffins, etc..)

I use olive oil for everything else but not whether your recipes that use olive oil tasting donuts, have weird taste.

Peanut oil is good for some things, because it burns so good to resist for its fried chicken and things, but for this kind of donuts they will not hurt to use canola oil. It will be nice.
